Tractor Tom birthday cake with gumpaste tractor (to make it lighter), cover and other decorations in marzipan.
It was a little bit tricky working with gumpaste since it dries pretty quickly, but just glue everything together and roll paper to make it stay in place.


Filling was once again raspberry / white chocolate. I like this combo since it has so much flavor in itself, raspberries are better to work with than strawberries I think. And it’s quite easy too. The raspberry mousse is a mix of vanilla custard, raspberry jam and whipped cream. I usually pass half the jam through a sieve to get rid of some of the seeds, and then as a final step add the remaining jam by just lightly mixing everything together.
